I am the co-owner of a small produce farm in rural Louisiana.

About 15 years ago, health challenges led me to research food, and I realized that preservatives are put into just about everything. So I started making mixes to use myself.

Once COVID-19 started and caused fear of food shortages, I was determined that my community would have enough food. So I began making mixes with very long shelf lives. My other requirement was to offer large meals in small packages. I believe I've met both goals.

I hope you enjoy these food items I've made as much as I enjoy making them. I have two rules when it comes to creating new food products: It has to taste great, and it must be simple to use.
